Ingredients 

  • 1.87 kg Cucumber fresh, diced
  • 100 gm Chickpeas canned
  • 100 gm Green Peas
  • 150 gm Feta Cheese crumbled
  • 20 gm Mine Leaves fresh, finely sliced
  • 60 gm Orange Segments fresh

Instructions

  • Wash, peel and trim cucumber. Drain chickpeas. Wash and trim green peas. Wash and slice mint leaves finely. Cut orange segments.
  • In a large bowl, combine all ingredients except for orange segments and chickpeas.
  • Combine all ingredients and mix gently (so that oranges and chickpeas are not crushed).
    Serve Cold.
  • Bulk: Portion into service dishes or leave in bulk for dining room service.
    Cold Plating: plate alone or as a side dish. Place on the cold side of the tray prior to service.
