Wash, peel and trim cucumber. Drain chickpeas. Wash and trim green peas. Wash and slice mint leaves finely. Cut orange segments.
In a large bowl, combine all ingredients except for orange segments and chickpeas.
Combine all ingredients and mix gently (so that oranges and chickpeas are not crushed).Serve Cold. Bulk: Portion into service dishes or leave in bulk for dining room service.Cold Plating: plate alone or as a side dish. Place on the cold side of the tray prior to service.
