Ingredients 

  • 850 gm Chicken Breast cooked, diced
  • 250 gm Bell Pepper large diced
  • 200 gm Red Onion large diced
  • 20 oz Canned Pineapple chunks, juice reserved
  • 150 gm Ketchup
  • 30 gm Cornstarch
  • 60 ml Red Wine Vinegar
  • 100 gm Granulated Sugar
  • 100 ml Cold Water
  • 60 ml Soy Sauce
  • 80 ml Pineapple Juice
  • 2 gm Salt

Instructions

  • Place chicken, peppers, onions, and pineapple in an oiled ½ hotel pan.
  • In a large mixing bowl, whisk remaining ingredients. Pour over chicken. Cover pan with plastic wrap and aluminum foil and cook in Multigen for 65 minutes at 140°C.
  • Bulk: remove from Multigen and serve alone or with a side dish.
    Cold Plating: allow to cool and plate alone or with a side dish. Place on the hot side of the tray to retherm prior to service.
  • Food Accompany: Rice.
