- Bulk Retherm Cart (or regular oven) or Tray Services Retherm Cart
Ingredients
- Ground beef or turkey, cooked
- Onion, minced
- Garlic, minced
- Kidney beans, canned, drained and rinsed
- Diced tomatoes, canned
- Tomato paste, canned
- Chili powder
- Oregano, dried
- Salt
- Pepper
Method
- Ensure onions are chopped finely. In a large bowl, thoroughly mix together all ingredients.
- Transfer chili to three 2” deep half hotel pans. Do not fill above the halfway point of the pan, and ensure chili is evenly spread over the bottom. Cover with plastic wrap and tin foil. Place pan on the third or fourth rack of the dense section in your Multigen for 55 minutes at 140 ˚C.
- Bulk: remove from Multigen and stir.
- Portion using two number 8 scoops. Serve warm.
Garnish: Cheddar cheese
Food Accompany: Rice or cornbread, salad or appropriate vegetable side.
