  • 1⁄2 size- 2” deep production pans
  • Bulk Retherm Cart (or regular oven) or Tray Service Retherm Cart

Ingredients

  • Potatoes, Fresh, Peeled
  • Milk, 2%
  • Butter (or margarine)
  • Garlic Powder
  • Onion Powder
  • White Pepper
  • Salt
  • Parsley, Fresh, Finely Chopped

Method

  1. Peel potatoes, cut into 4. Transfer to a 1⁄2 size- 2” deep production pan and cover with water. Cover pan with plastic wrap and aluminum foil. Place pan in Multigen for 50 minutes. Wash and finely chop parsley.
  2. Remove potatoes from Multigen, drain off water. Combine all other ingredients in a bowl.
  3. Using a mixer or masher, mash potatoes roughly and then add remaining ingredients. Continue to mash until smooth or desired consistency. Serve Hot.
  4. Bulk: Portion into service dishes or leave in bulk for dining room service. Cold Plating: allow to cool and plate alone or as a side dish. Place on the hot (or cold) side of the tray prior to service.

Garnish: Chopped parsley
