 - Potato Masher/Mixer
 - Scoop
 - Mixing Bowl or Pan
 - 1⁄2 size- 2” deep production pans
 - Bulk Retherm Cart (or regular oven) or Tray Service Retherm Cart
 
Ingredients
- Potatoes, Fresh, Peeled
 - Milk, 2%
 - Butter (or margarine)
 - Garlic Powder
 - Onion Powder
 - White Pepper
 - Salt
 - Parsley, Fresh, Finely Chopped
 
Method
- Peel potatoes, cut into 4. Transfer to a 1⁄2 size- 2” deep production pan and cover with water. Cover pan with plastic wrap and aluminum foil. Place pan in Multigen for 50 minutes. Wash and finely chop parsley.
 - Remove potatoes from Multigen, drain off water. Combine all other ingredients in a bowl.
 - Using a mixer or masher, mash potatoes roughly and then add remaining ingredients. Continue to mash until smooth or desired consistency. Serve Hot.
 - Bulk: Portion into service dishes or leave in bulk for dining room service. Cold Plating: allow to cool and plate alone or as a side dish. Place on the hot (or cold) side of the tray prior to service.
 
Garnish: Chopped parsley
