Equipment
- Measuring spoon and cup
 - Chef’s knife/Cutting board
 - Mixing Bowl
 - ½ size- 2” deep production pans
 - Bulk Retherm Cart (or regular oven) or Tray Service Retherm Cart
 
Ingredients
- Turkey strips, cooked
 - Oil, Olive
 - Peppers, mixture, julienned
 - Onion, finely diced
 - Thyme
 - Vinegar, Balsamic
 - Salt
 - Pepper, black
 
Method
- Cut both the onion and peppers and place with turkey strips in a bowl
 - Place all of the herbs, oil, and vinegar together and mix with vegetables and meat
 - Place into a ó size-2” deep production pan and cover with plastic wrap and aluminum foil. Place pan in Multigen for 55 minutes to cook.
 - Bulk: remove from Multigen and serve with a starch side dish. Cold Plating: Place on a plate from step #2 and cover and place in retherm prior to service to heat (For best results add some of the vinegar sauce to the casserole heating dish)
