 - Spoon/Spatula
 - Mixing Bowl or Pan
 
Ingredients
- Roma Tomatoes, Fresh, Diced
 - Red Onions, Fresh, Diced
 - Cilantro, Fresh, Chopped
 - Garlic, Fresh, Minced
 - Olive Oil
 - Salt
 - White Pepper
 
Method
- Wash Roma tomatoes and cilantro. Peel red onion and garlic. Dice Roma tomatoes and red onion. Chop cilantro. Mince garlic.
 - In a large mixing bowl, combine all ingredients gently with a spatula. Place in the refrigerator prior to use.
 - Serve on top of various dishes as a garnish or accompaniment. Serve Cold. Keep refrigerated for several days to multiple uses.
 - Bulk: Portion into service dishes or leave in bulk for dining room service.
 - Cold Plating: allow to cool and plate alone or as a side dish. Place on the hot (or cold) side of the tray prior to service.
 
Garnish: Chopped cilantro or parsley
