Ingredients
- 1.725 kg Roma Tomatoes fresh, diced
- 100 gm Red Onions fresh, diced
- ¾ tsp Cilantro fresh, chopped
- ¾ tsp Garlic fresh, minced
- 1 tbsp Olive Oil
- ⅓ tsp Salt
- ½ tsp White Pepper
Instructions
- Wash Roma tomatoes and cilantro. Peel red onion and garlic.
- Dice Roma tomatoes and red onion. Chop cilantro. Mince garlic.
- In a large mixing bowl, combine all ingredients gently with a spatula. Place in the refrigerator prior to use.
- Serve on top of various dishes as a garnish or accompaniment.
- Serve Cold. Keep refrigerated for several days to multiple uses.
- Bulk: Portion into service dishes or leave in bulk for dining room service.Cold Plating: allow to cool and plate alone or as a side dish. Place on the hot (or cold) side of the tray prior to service.
